100% Pinot Noir grapes
Selected based on their maturity and acidity, the Pinot Noir grapes, harvested by hand, arrive at the estate in small perforated crates to avoid crushing and thus preserve its personality whole. After passing over a sorting table, the grapes are gently pressed to extract the juice without touching the stalks. The split between 1st and 2nd juice allows precise analytical monitoring during the various stages of vinification into still wine. Then begins the process of fermentation in the bottle that will last 15 months for this Crémant in cellars at 13°C. This long maturation will later confer a fine, regular and delicate foam to the Crémant de Bourgogne Rosé.
